“Why do you put so much emphasis on using fresh vegetables, fish, and meat, in other words, fresh ingredients, in your cuisine?”
HILDA
Using fresh ingredients in cuisine is often highly valued because they offer several advantages.
Firstly, fresh ingredients tend to have better flavour and texture. Fruits, vegetables, fish, and meat that are freshly harvested or caught are usually at their peak in terms of taste and quality. They can impart vibrant flavours and have a more pleasant mouthfeel when used in dishes.
Secondly, fresh ingredients often retain more nutrients. Over time, certain nutrients in food can degrade, so using fresh produce ensures a higher nutritional value in the final dish. This can be particularly important for maintaining a healthy and balanced diet.
Additionally, fresh ingredients provide greater control over the cooking process. Every chef can assess the quality, appearance, and freshness of ingredients, allowing them to make informed decisions about how to prepare and combine them. This attention to detail can contribute to the overall quality of the cuisine.
Finally, using fresh ingredients can support local farmers and sustainable food systems. By fresh, locally sourced products, chefs can promote the use of seasonal and regional produce, support local economies, and reduce the environmental impact of long-distance transportation.
Overall, using fresh ingredients is a way to enhance the taste, nutritional value, and overall quality of cuisine, while also supporting local communities and sustainable practices.
